Testimonials
I just completed my first attempt at your recipe for macarons!!! It was a long and tense day. I am very proud to announce that despite the anxiety, the macarons are a great success. I do have to admit that they are not perfect but they are far superior to any of the other recipes that I tried so far.
They are perfectly round and they have beautiful little feet!!! The first pan was a bit sticky so I let the other pans stay in the oven for an extra minute and that did the trick. They all came off the pan perfectly after that and the bottoms were almost all perfectly flat.
Overall, I am extremely pleased with the results and I am confident that my next batch will be even closer to perfection.
I attribute my success to your class and the excellent pointers that you gave us. Thank you so much, not only did I have early success but we all had a really nice time at your house. I’ll keep you posted until I’m confident that I know what I’m doing. Thank you again, Nancy

Before meeting Connie, my mom and I had spent afternoons attempting (and failing miserably) to make this finicky French confection, so for mother's day, I took her to Connie's baking class where we spent a wonderful afternoon learning all the secrets to making macarons. At our earliest opportunity we again prepared all the ingredients and followed the steps we'd learned in class. SUCCESS! One hundred completed macarons, each tall and frilly and smooth on top. Nothing like the multicolored, no-frill (that's bad), wafer-like failures of before!
Neither of us had ever been to cooking class before. Connie invited us into her home where we first sampled some completed macarons and learned all about what makes a perfect macaron, as well as the work that goes into them. We then spent the rest of the class making the macaron shells and two kinds of filling, and carefully assembling them. The steps we followed were provided in print for us to take home. We were also given some baking tools and 20 of the completed macarons we'd made in class, and she had any necessary baking equipment available to buy if needed.
As a small class of 5, we each got hands-on experience and practice at many steps of the process, especially piping. Connie was able to accommodate all our different skill levels and fill in any knowledge gaps. She was friendly and patient and even shared her stories about her trips to Paris and how she developed such an interest in these delicate desserts.
I would recommend this class to anybody, even if you have not done much baking before. Thank you Connie for a fun and informative afternoon! - Sylvie

Just wanted to drop you a note to say how much fun I had in your class. I have been telling all my friends about it. I must say that of all my cooking courses that I have taken in the past, I found your class the most informative. Your recipe sheets are very easy to follow and you didn’t leave out any steps. I feel very confident that I could actually make macarons. I now appreciate why the macarons are so expensive. Since I saw you last I have gone out and purchased a KitchenAid mixer and digital scale. - Joanne
Thanks Connie again for giving us such an awesome class... now we all know more about macarons!! especially how to pronounce the word~ LOL~~ Shirley Y.
Your macarons were truly amazing; they really stand out to Laduree! Indeed, they are the best testing and best looking macarons I had so far in Vancouver! So if you don't hear from me for while, consider that time practicing... I have to learn how to make those! - Valentine
I spent a wonderful afternoon this week with friends and Connie learning to make Macarons. Connie is very confident and competent and we left with all the knowledge we need to make these delicious delicacies at home. Try Connie's classes, you won't be sorry. -Carol F.

Connie, I was in your class a couple of weeks ago with the 'Karry' group. It was a very enjoyable class and learnt a lot. Before I try making the macarons, I do want to buy a few more things from you even though I've already bought one pan and the sieve. - Benny
Thank you very much for an amazing class Connie! Can't wait to eat the macarons! - Lina
Connie, thanks for putting on a fun and really informative class. You have everything organized so perfectly and efficiently. - Janie
Fantastic class, and Connie "rocks" the macarons. You need to be 100% committed and no shortcuts - otherwise, no guarantee that the end product will be as good! - Tasha
I am mailing the macarons off to our son and daughter in law in San Francisco tomorrow. Just a teaser and hopefully more to come. I will spread the good word about your macarons in White Rock. Thanks again and I will let you know how my first solo attempt turns out. -Regards, Audrey
