Masterclasses of French Pastry by Pastry Chef  Connie 

Definition of Masterclass:  a class taught by someone who has an expert knowledge or skill in a particular field or area.

Mille Crepe Cake  

​Discover the art of French Crepes, taught by Connie Mar, a Paris trained Le Cordon Bleu Pastry Chef.  Then become an expert at making crepes by making 20 layers to complete your very own 9" Mille Crepe Cake to take home.  Between the crepe layers, you'll learn the secret recipe for the "light as air" pastry cream and whipped cream filling, then you'll flavor it with your choice of vanilla, cocoa or matcha.  Ah dessert heaven!  

​$120 per person. All ingredients to make the cake will be supplied. 
​Max. of 5 people per class.

There will be a variety of brand new crepe pans to use so that you can determine which one suits you the best.  Crepe pans are sold separately and prices start at $35 each.

TAKE HOME: one large 9" round 20 layer Mille Crepe Cake in a beautiful Pink Bakery Box and Wooden Crepe Stick and a Wooden Crepe Turner (imported from Paris).

Please note: this cake is best enjoyed on the same day that it is made.  Please plan for a party at home with your favorite dessert lovers!

Tarte aux Framboises et Pistache

This extraordinary tarte is the MOST requested dessert amongst my family and friends.  I'm reluctantly willing to share the secrets with you!

The flavors of raspberry and pistachio cream are intoxicating and the colors are captivating as well.  You'll learn how to expertly line a tarte ring, create the fillings and decorate with fresh raspberries and star tip too.

You'll go home with a delicious  6.5" tarte, packaged in a pastry box tied up with satin ribbon and tools to make to make it again at home, including the 6.5" French tarte ring, star tip and pastry bag too.

Afternoon tea will be elegantly served with madeleines and macarons.

Choux, Choux, Choux

Did you know that Choux are the hottest French Pastries on the streets of Paris right now?  Commonly known as cream puffs in North American, Choux is definitely going through a revitalization with exciting new flavors and fillings.  

In this class, through demonstrations by Pastry Chef Connie, who was trained at Le Cordon Bleu in Paris, you'll learn and also practice some hands-on tips on the tricks of cooking and baking Choux Pastry.  

​You'll go home a pastry tip and pastry bags and some freshly baked choux too in the form of Crispy Topped Cream Puffs filled with Chantilly Cream, Chocolate Dipped Eclairs filled with Pastry Cream and Gougeres (
savoury cheese puffs). 

You'll learn many creative ways to flavor the fillings so that they can be tailored to your specific tastes.

Madeleines and  Chocolate Souffles

Discover the trade secrets of what makes Madeleines so addictive to eat. Perhaps it is it the slightly crispy surface of the tea cakes or maybe it is the flavorful and delightful texture of the mini treat itself.  

In this class, through demonstrations by Pastry Chef Connie, who was trained at Le Cordon Bleu in Paris, you'll learn and also practice some hands-on tips on madeleine making.  You'll go home with your batter (for baking the next day), a madeleine pan and some freshly baked madeleines too. You'll learn many creative ways to flavor madeleines so that they can be tailored to your specific tastes.

You'll discover important tips on how to make and bake Dark Chocolate French Souffles, which we will enjoy "hot out of the oven" with Creme Anglaise.

Afternoon tea will be elegantly served with your desserts.

$120 per person. Max. of 5 people per class.

Ooh la la!  Learn how to create these beautifully piped buttercream frilly dresses around a darling little dolly.
